Fructose can only be metabolized in the liver, which will convert most of the fructose into fat. Additionally, fructose does not stimulate an insulin response, which would normally suppress the appetite. In the absence of this cue, one would not feel that they had been satiated after eating foods that contain high amounts of fructose.
