Products are placed on or between horizontal or vertical refrigerated plates that provide efficient heat transfer and short freezing time.

Answer to Question 2

Products are frozen by immersion in a boiling, highly purified refrigerant. The product is then removed and the freezing process completed in a mechanical freezer.
