Cream of tartar, an acid salt, as an added ingredient in a candy formula, serves indirectly to decrease the rate of crystallization as well as crystal size.

Invert sugar is a mixture of fructose and glucose. The term inverted comes from the practice of measuring the concentration of sugar syrup using a polarimeter and the direction that polarized light is rotated.
