Common problems/potential solutions that can occur when casual service properties offer carry-out service include:

Orders that are called in may not be picked-up by customers  Require credit/debit card payment at the time of ordering.

Food is cold or otherwise of low quality when consumed  Consider whether some items should not be offered for carry-out service because of excessive quality deterioration during transport time.

Food pick-up area crowded because of table service customers waiting in the same area  Consider this potential problem at time of construction or at time of re-modeling to determine whether practical remodeling changes can be made.

Potential advantages of using a decentralized purchasing system include reduced bureaucracy and increased ability to make purchasing procedure and product modifications based on the needs of an individual operation.

Answer to Question 2

A champagne glass is a slim flute shape design, which keeps the champagne from

losing its bubbles too quickly. A white wine glass is normally taller and narrower by design compared to the red wine glass that is a balloon-like shape, which helps the wine to breathe by exposing more of its surface area. The balloon-like shape allows the guest to swirl the wine in the glass as it reacts with air. Refer to Figure 3.13, Glass Shapes.
