Answer to Question 1

Active dry yeast is sprinkled on water and allowed to sit before stirring so the yeast can dissolve in the water or proof to become active. Sugar is added as fuel for the yeast.

Answer to Question 2

During the straight dough mixing method, all of the ingredients are combined and mixed, kneaded, and then left to rise.
