Why are biscuits kneaded?

Question 2

Should a muffin recipe be modified when cake flour is substituted for all-purpose flour? If so, how?

Answer to Question 1

To develop gluten. Biscuits are prepared differently in that the plastic fat is cut into the flour particles. Kneading is the mixing method for gluten development after the dough is hydrated.

Answer to Question 2

Cake flour can be mixed more than all-purpose flour and still result in a quality product due to the low protein content of cake flour, which will result in less gluten formation.
