Answer to Question 1

Rennin is an enzyme obtained from the stomach of milk-fed calves. Rennin coagulates milk by hydrolyzing casein. It produces a tough, rubbery curd with low moisture content.

Answer to Question 2

Casein is the primary protein source in cheddar cheese; whey is the primary protein in primost cheese; and soy is the primary protein in tofu.
