Frozen food must be put under a vacuum in the freezedrying process in order for the
water to turn to vapor at a lower temperature.



Answer to Question 2

Refrigeration was very important to the food industry because it meant that food could
be shipped across the country without spoiling. It also introduced people to a large
variety of different food
