Answer to Question 1

The primary bacteria used are typically Lactobacillus bulgaricus and Streptococcus thermophilus, and U.S. law requires all yogurts to contain these two cultures. Other may be added as probiotic cultures, such as Lactobacillus acidophilus.

Answer to Question 2

The lactic acid-producing bacteria grow best at the warmer temperature.
