Why do popovers and cream puffs have large interior cavities, but waffles and pancakes do not?

Answer to Question 1

Steam, the leavening agent in the popovers and cream puffs, is generated baking in a very hot oven, which causes them to 'pop.' Waffles and pancakes contain less liquid to form steam and they are leavened primarily by carbon dioxide from baking powder, so there is less pressure in the interior.
