A German dish uses red cabbage and apples, in a sweet-sour sauce. Why are these ingredients beneficial in combination?

Answer to Question 1

The apples have naturally occurring organic acids, while the vinegar in the sweet-sour sauce also adds acid. The acid reacts with the anthocyanin pigment of the red cabbage and keeps it a deep pink color, which is more appetizing than the purple color of cooked red cabbage.
