The food of West Africa is boiled or fried. It is made of starchy vegetables and has limited meat. Northern African foods include more variety and is characterized by the use of marinades, citrus, and meat, including goat, pigeon, and camel. The tsetse fly limits livestock in Western Africa, and the lack of ovens limits methods of food preparation.
