Customers who make a restaurant or foodservice purchase seek quality products, quality service, cleanliness, value, and a total dining experience. Quality products mean more than good taste. The products must also be served properly. Customers expect to buy excellent service, which may be classified in many ways including friendly service, fast service, elegant service, courteous service, or attentive service. In all cases, the service must be of high quality and be customer-centric. Customers also want to buy products and services from an operation that is clean. For many guests, cleanliness is one of the major reasons they would, or would not, return to an operation. Customers also seek good value in their purchases. Good value means consistently receiving high-quality products and services at fair prices. Last, customers buy a total dining experience. It is the responsibility of restaurant and foodservice managers to manage their customers' moments of truth in a way that consistently results in a positive total guest experience.
