Answer to Question 1

The most profitable menu items are placed on the menu where they will be noticed and ordered by guests. The guest's eyes naturally go to the top and bottom of menus and to the right of a bi-fold menu. Special items are often highlighted by the use of colorful, creative fonts or boxes so that they stand out and are recognized as special. The way prices are placed on a menu is also very important; for example, if prices are placed in a column it makes it easier for a guest to look for the least expensive itemalthough some menus have prices following the description of each of the menu items.
