Like many other food products, some fruits, vegetables and dairy products are packaged under nationally labeled brands (e.g., Dole brand pineapples, Green Giant brand vegetables, and Ben and Jerry's brand ice cream).
 
  How important do you feel name-brand products in these categories would be to your restaurant guests? How would you best communicate the use of these name-brand products to your guests?

Answer to Question 1

This question asks students to assess the value of brand name products in the restaurant industry. The decision to use and pay slightly more for brand name products versus generic or lesser-known products (e.g. offering A-1 steak sauce versus a lower cost alternative product) is one faced by most food service managers. When this question is discussed with students it will be important to point out that different consumer groups may value brand names differently. For example, older guests may be more familiar with specific products than are and operation's younger guests. This is especially true with product brands that have been marketed for extended periods of time. Alternatively, some older guests may not be as familiar with some brand name food and beverage products that have recently been targeted to younger markets.

The duties and responsibilities for the host position will vary and be set forth by the needs

of each individual restaurant operation.
