The handheld touch-screen terminal, shown in Figure 8.7 speeds service and allows the server to take orders directly at the table. There are many benefits to the handheld system. This system eliminates frequent unnecessary trips to the kitchen, allowing servers to remain in the dining area to better meet their guests' expectations. It provides flexibility and portability in remote locations like patios and in large facilities such as stadiums, casinos, and resorts where the server must go some distance to serve guests. The handheld terminal provides accurate, up-to-date information if a menu item is out of stock which eliminates guest disappointment before they place an order. Handheld touch-screen terminals are also used as POS terminals, allowing the manager to perform functions which require authorization on the go, such as promotional comps, adjusting menu item availability, and transferring tables between servers.

When serving beverages it is important to never place your fingers near where a guest would drink.
Beverage glasses, such as a highball glasses or a stemless wine glass, should be carried by the base.
Stemmed glasses, including a stemmed water glass or a wine glass should be carried by the stem.
Cups and mugs should be carried by the handle and placed in front of the guest with the handle in the 4 o'clock position.
