Answer to Question 1

This type of person seeks attention and as a result can be somewhat irritating. The server should be polite, but firm in ignoring the comment, and give the guest the same type of professional service that any other guest would receive, and bring more bread to the guest. But, if the guest continues to be rude, the server should inform the manager and not be subject to continued verbal abuse.

Answer to Question 2

When place mats are used on rectangular tables, they should be centered between the fork and knife and approximately one-half inch from the edge of the table, as shown in Figure 3.2 For round tables, rectangular place mats should be placed so that the corners of the place mat are one-half inch from the edge of the table.
Place mats of varying shapes and sizes, such as oblong, oval, or round, should be placed accordingly.
