The restaurant could be categorized using a new restaurant segment- counter casual where you can combine the full table service after you order with the counter service style when you first arrive at the restaurant. It could also just be a variation of the fast casual restaurant style, but the price point makes it very high priced for this segment. It is critical that guests understand the service style and thinks that it is worth the cost and variation in the service style.
