The four key fats used in Indian cuisine are ghee (from butter) which is most common in
the north; mustard oil (from pressed mustard seeds) which is most common in the East,
especially Bengal;. fragrant coconut oil which is most prevalent in the south; and lastly a
variety of oils that are pressed from vegetable sources especially from sesame seeds (used
in the south), or peanuts (used in central India).
