A food allergy occurs when the body reacts abnormally to a particular food
by creating antibodies against it. The food or food ingredient is called the
allergen. When the person eats the allergen again, the same reaction occurs.
Even tiny amounts of the allergen can cause an allergic reaction in some
individuals. There are no cures for allergies, and some of them, such as those
to peanuts, tree nuts, and shellfish, are lifelong in most cases. Eight food allergens cause about 90 percent of life-threatening allergic reactions. They are eggs, wheat, tree nuts, peanuts, soy, cow's milk and milk products, fish, and shellfish.
