Answer to Question 1

Brewing time is usually about 5 minutes depending on the grind. Finely ground coffee requires less time for extraction than coarsely ground coffee. Very fine ground coffee requires 1-2 minutes brewing time using espresso or filter equipment. Pulverized coffee requires 2-3 minutes brewing time using a Turkish coffee pot. Fine ground coffee requires 2-4 minutes brewing time using vacuum and pressure brewing equipment. Drip ground coffee requires 4-6 minutes brewing time using drip pot equipment. Regular ground coffee requires 6-8 minutes brewing time using percolator equipment. Coarse ground coffee requires 6-8 minutes brewing time using percolators with aluminum filters.

Answer to Question 2

If the water is boiled, dissolved oxygen will escape and result in flat-tasting coffee. Coffee will also be less flavorful since boiling causes the loss of volatile compounds. Higher temperatures result in excess extraction of bitter compounds. Lower temperatures do not extract enough flavor.
