The treatment for celiac disease is lifelong adherence to a gluten-free diet. Improvement in symptoms often occurs within several weeks, although mucosal healing can sometimes take years. If lactase deficiency is suspected, patients should avoid lactose-containing foods until the intestine has recovered. The gluten-free diet eliminates foods that contain wheat, barley, and rye.
