The glycemic index of foods describes the extent to which individual foods can elevate blood glucose levels. Why are many diabetics NOT encouraged to choose foods based on their glycemic index values?

Answer to Question 1

Many studies have shown that a foods do not raise blood glucose in all persons to the same extent; people have different glucose tolerances. Also, foods in combination may raise blood glucose levels differently than foods eaten in isolation. While white bread alone may raise blood glucose levels quickly, when eaten with peanut butter it may not, since the fat and protein digestion occurring along with the starch digestion may slow down the absorption of glucose into the blood.
Diabetics should be encouraged to eat whole foods that will provide natural sugars together with fiber, which may raise blood glucose levels more slowly.
