ANS: Answer should explain that refined grains, such as white bread and white rice, are made with only the endosperm of the grain kernel, whereas whole grains, such as brown rice and oatmeal, are made with the entire edible grain kernel. As a result, whole grains are abundant in vitamins, minerals, fiber, and phytochemicals possessing disease-fighting properties, and may help lower your risk of heart disease, stroke, cancer, and diabetes.

Answer to Question 2

ANS: Fasting or a low-carbohydrate diet leads to ketosis because you are not consuming enough carbohydrates. This depletes your liver's glycogen stores and your body must rely on fat and protein breakdown for fuel. Without the glucose to burn fat thoroughly, your body releases ketone bodies, by-products of the incomplete breakdown of fat, into your blood. The ketone bodies cause your blood to become slightly acidic, and leads to a state of ketosis.
