Joe is a college student interested in getting more muscular. At his gym a friend suggests that drinking a shake with raw eggs is a good way to build muscle. You tell him that one reason for cooking eggs prior to their consumption is that it releases:

This bacterial genus produces lactic acid as a by-product of metabolism. It is found in the female reproductive tract and maintains a lower pH (more acidic environment). This property and the physical features of the lactobacillus bacterial species allow it to withstand stomach acid more easily than other bacteria.
