Beans provide protein and iron, as well as fiber without a lot of saturated fats. Red peppers contain vitamin C that helps with iron absorption from the beans or another vegetable source. Athletes need vitamin C as an antioxidant to minimize free radical-related damage due to sustained aerobic exercise.
