A saturated fatty acid is filled to capacity with hydrogen, whereas an unsaturated fatty acid is missing at least one hydrogen and thus has at least one double bond between carbons. Saturated fatty acids are solid at room temperature, and unsaturated fatty acids are liquids at room temperature. Saturated fats should be limited in the diet; by contrast, replacing saturated fats with unsaturated fats has a beneficial effect on health.
