Most nonfat dry milk is agglomerated or instantized which means it
 
  (1) dissolves rapidly in water, (2) dissolves slowly in water, (3) is less stable to storage, (4) will not spoil, (5) 1 and 3

Question 2

Clumping of dried milk can be reduced by controlling glass transition temperature (Tg) during drying.
