Cured meats in Italy are a primary component of antipasti and consumed
regularly by Italians. Coppa is a cured meat which is unique to Italy, and has a
delicious, complex flavor. Mortadella is a specialty of the city of Bologna. It has
a distinct look with the sections of white fat which are contained in it.
