Hard wheat is grown during the winter and is high in protein, which makes it good for making bread. Soft wheat is grown during the spring and contains less protein, which is good for making cakes and pastries. Farina, known as Cream of Wheat, is made by granulating the endosperm of the wheat into a fine consistency. Bulgur wheat is whole wheat that has undergone parboiling, drying, and partial debranning before being cracked into rough fragments.
