The proportion of water to cereal when making brown rice is 2:1; additional water is needed for brown rice to soften the bran and germ that remain.

Hard wheat is grown during the winter and is high in protein, which makes it good for making bread. Soft wheat is grown during the spring and contains less protein, which is good for making cakes and pastries. Farina, known as Cream of Wheat, is made by granulating the endosperm of the wheat into a fine consistency. Bulgur wheat is whole wheat that has undergone parboiling, drying, and partial debranning before being cracked into rough fragments.
