  What will be an ideal response?

To achieve gels of the same gel strength
 
  (1) always use the same amount of starch, (2) vary the amount of starch, depending on the type of starch, (3) start by dextrinizing the starch, (4) heat all starches to the same final temperature, (5) avoid heating above 60C.

To enhance nutritive value, to improve flavor, color, and texture, to extend shelf life, to control pH, for leavening, for bleaching and maturing, and to ease manufacturing problems.
