Stellar is also starch based. Slendid is a pectin based fat replacement. Oatrim is made from oats and has a variety of uses. RiceTrin 3 Complete is a similar product from rice. Avicel cellulose gel is a fat substitute for salad dressings. Polydextrose is used as a bulking agent, texturizer, and humectant. Modified food starches from corn and potato starch are also used as fat replacements. Fat-based replacement - Salatrim contributes only 5 kcal/g. Caprenin uses two fatty acids from coconut and palm kernel oil. Used as a chocolate coating for candies. Olestra is a sucrose polyester.
