Name one ingredient in angel food cake that is not found in shortened cakes and give two functions of this ingredient.

INGREDIENT: Cream of tartar

FUNCTIONS: 1 . Whitens - bleaches pigment
2 . Stabilizes egg white foam
3 . Decreases pH
4 . Smaller cell size
5 . Tenderizes
