A Georgian sauce which is totally unique is Tkemali. It is an important sauce in
Georgian cooking which is used both as a condiment and in different cooked dishes. It is
unusual because its primary ingredient is unripe plums which give the sauce its unique
sour flavor. It also has the plums, coriander, fenugreek, and garlic. These things are
cooked together and then pureed until smooth. It is then seasoned with salt, chili flakes,
lime or lemon juice, and cilantro. It can be heated more to thicken it more.
