To establish a food-allergen program, an operation must review its marketing
plan, company policies, legal requirements, and customer needs. Then it must
set processes and procedures used to determine and reduce allergen risks in
the operation. Some specific actions that may be taken as part of a food-allergen program
can include reviewing ingredients, recipes, and plating for selected allergens.
Cross-contact can be a source of potential allergens. Managers may also
choose to review menu items for possible modifications and substitutions.
They must determine which menu items will be modified or substituted
and then prepare detailed instructions for staff. Plans for communicating
customer's allergen-related requests must also be developed.
