Answer to Question 1

Cake flour yields the highest quality cake because it is soft wheat, which is low in protein. Therefore, minimal gluten is formed with cake flour, resulting in a tender, white, high-quality product.

Answer to Question 2

No, sugar substitute is not a satisfactory replacement of sugar. Usage of a sugar substitute modifies the texture and volume of the final product.
