When you want the flavor of the oil transferred to the food. Flavored oils are not often used for frying because they transfer their flavor to the fried food.

Presence of double bonds. Monounsaturated oils have a single double bond, whereas polyunsaturated oils have multiple double bonds. Due to unsaturation, both have the potential for rancidity.
