Twice a week engage in light resistance training to keep your upper body muscles toned and active. These muscles tend to get less of a workout during most types of aerobic exercise so engaging the upper body muscles helps to prevent their age-related muscle loss.

Answer to Question 2

The first thing to do is buy a step counter or pedometer. Take your baseline during week one and then gradually work up to a 10,000 step per day goal after several weeks.
