Supersaturation deals with the concentration of a true solution. A supersaturated solution contains more solute (in the case of candy, sugar) than can theoretically be dissolved at that temperature. It occurs when a saturated solution is boiled and cooled without agitation. In making fudge, the sugar mixture is heated to the softball stage, at which stage it is saturated. It is then cooled without agitation. At this point it is supersaturated. Then stirring causes crystallization.
