Since all of restaurant units are in the same metropolitan area, food cost (purchase unit prices) and wages for hourly-paid employees should be similar. This should make it easier to determine when food and labor costs are excessive because they can be judged against the benchmarks of other properties in the restaurant chain.

Revenue variations may be more difficult to generalize about because, for example, road work, near-by competitors, and a property's reputation in a neighborhood or surrounding area may be different.
