The first step is to establish revenue, unit sales, or othergoals for the item. Alternative menu items are then assessed and a formaltesting system is put in place. Managers test and refine their chosenalternatives, a process that includes serving the item to customers. Based oncustomer feedback and their own assessments of the item's ability to achieveits goals, managers then make the decision to add, or not to add, the newitem to the existing menu.
