A Spanish sofrito is the classic aromatic vegetable combination which is used at
the start of multiple Spanish dishes. Its ingredients are onions, garlic, tomatoes,
and parsley, and olive oil (sometimes green pepper). The procedure is to cook the
onion slowly in olive oil, almost like a braised vegetable, until the onion is golden.
The other ingredients are added throughout the process until there is a thick mass.
This is the flavoring base that is used by itself as a tomato sauce, or as the
beginning of the fillings for empanadas, the base of paella and most Spanish stews
and soups.
