Answer to Question 1

The initial churning of ice cream freezes about 33-67 of the water, while the second freezing during storage freezes an additional 23-57.

Answer to Question 2

Recipe with  c. sugar is expected to be the most desirable ice cream due to desirable flavor, body, and texture.
